First year my cherry tree is producing, and it's a bumper crop!
I have this cherry clafoutis in the oven right now, I'm going to pit and freeze some for later, and of course, share.
What else should I be doing with them? If it matters, they're a variety that's between a tart and bing; still sweet enough for fresh-eating. Flesh is light and skins are red.

Thanks Paula! I am working on a cherry syrup right now. Trying to stay away from too many desserts, but a dash of it will be nice in seltzer water.
Canyon suggested putting them in booze, which is exactly what I did with a bunch of them last night. 1 quart into white tequila, 1 quart into vodka with a cup of sugar each. This gave me a light bulb moment when picking Josta berries yesterday, and I plopped them all in a bottle of Pisco DH brought home from Peru like 8 years ago. Should make for some fun cocktails for the holidays.
Susan, the clafoutis was soggy, but that's probably my fault since I used coconut flour. I might keep some cherries out and give it another shot with a tweaked recipe.
I will definitely be investing in a more advanced cherry pitter before next year!

I have used this recipe many years ago, it was excellent. Thanks for the reminder.
I noticed in the reviews that one cut sugar in half, another used peaches.

If you still have any cherries left, here is another idea from the article Sweet on Sour. "A handful sauteed in a little red wine, balsamic vinegar and broth can dramatically change anything off the summer grill."

Straightforward, where are you? I'm on the west coast of the northern lower peninsula of Michigan and ours will be coming on this next week. Strawberries are about done.
